This weekend I learned to make rice in the microwave. It's so easy! 1. For a single serving, put 1/2 cup of white rice and a whole cup of water into a bowl that has room at the top.
2. Cover the bowl with plastic wrap, place it in the microwave and cook for approximately 9 minutes.
3. Do not open the microwave door when done but let the rice sit for an additional 5 minutes.
That's it. You can add butter and salt before or after the cooking process. The amounts and cooking time vary for brown rice.
I added in some canned tuna and hot red pepper flakes and had myself a fine little meal. I'd love to hear your suggestions for quick one person meals.
